Meet your friendly Hosts - Brian and Chad

Brian Folino, a Seattle native growing up in Wine Bar & CafeWest Seattle, began his restaurant career at McCormick's Fish House on 4th and Columbia when he was 19, with stents at The Brooklyn, Umberto's, Cutter's Bay House, and a 9 year tenure at the James Beard award winning restaurant Fullers at the Seattle Sheraton starting as a bus boy and finishing as the Maître D, and he's never looked back. On the espresso/coffee side, he started an espresso catering company, Espresso Loco with French Clements, and went through the Vivace one year apprenticeship program to further his art and experience.

Brian having worked every front of the house position at his various places of employ brings an understanding of the flow and importance of each of the components necessary for a smooth running restaurant. Primarily working the mornings, he'll be ensuring quality control for gourmet espresso, coffee and food preparation.

 


Wine, Beer, cafeChad Campbell moved to Seattle in early 1997 from Arizona bringing 12 plus years of working in the restaurant industry in the Phoenix and Scottsdale areas, including the Phoenician Resort, the Princess Resort, and James Beard nominated Southwestern Cuisine Restaurant Café Terra Cotta in Scottsdale. Prior to moving to Seattle, Chad spent time bartending and serving in Ketchikan, Alaska. This is what prompted him to move to the Pacific Northwest. More recently, Chad has been working in the Wireless Telecom industry for the past 13 years here in Seattle, but has kept his "foot" in the door, working catering jobs for the Seattle Sheraton. Chad's experience has been front of the house, and along with a rich experience in sales and sales management, he brings a commitment to service and treating people in such a way that makes them want to come back to In The Red not only for the pricing, but because they receive friendly, prompt and non-stuffy service.
